CHIA PUDDING WITH FRUIT CAVIAR

INGREDIENTS

1. Refrigerate both glasses of oil until very cold, or, to save time, place it in the freezer for 1 hour. 

Chia Pudding

2. Combine all ingredients and transfer to small, clear bowls. Let sit in the refrigerator for at least 30 minutes before serving. While you wait, make strawberry and orange pearls.

Strawberry Pearls

3. Cut strawberries into small pieces, place them in a medium-sized pot and cover with water. Cover the pot and bring to a boil, then let simmer for another 20 minutes. Regularly scoop off any foam forming on the surface.


4. Using a sieve and above a medium-sized bowl, filter preparation without pressing the strawberries. discard strawberries, then transfer filtered liquid back to the pot and add in sugar. While stirring, bring back to a boil to completely dissolve the sugar, then let simmer for another 5 minutes. Again, regularly scoop off any foam forming on the surface.


5. Sprinkle 1 sachet agar-agar into the pot and mix it in using a spoon. Bring to a boil one last time, then remove from heat immediately.


6. Remove one glass of cold oil from the freezer or refrigerator. Using a pipette held at a 90° angle, slowly drip droplets of the agar-agar preparation into the cold oil. Stir gently, then, using a sieve, collect pearls and briefly rinse them underwater. reserve.

Orange Pearls

7. In a small pot, reduce orange juice until only about ¾ of a cup (190 ml) of liquid remains. Sprinkle in 1 sachet agar-agar and mix it in using a spoon. Bring to a boil, then immediately remove from the heat.

8. Using a pipette held at a 90° angle, slowly drip droplets of the agar-agar preparation into the cold oil. Stir gently, then, using a sieve, collect pearls and briefly rinse them underwater.

Assembly

9. Mix strawberry and orange pearls into each pudding, then decorate with goji berries, puffed rice and orange zest.
