1. Bring the honey, water and AGAR-AGAR to a boil.
2. Remove from stove and let sit, uncovered, for 5 minutes.
3. Pour a thin layer of the mixture onto a rectangular plate or a small baking sheet and let sit for 10 minutes.
4. Using a knife or cookie cutter, cut the gelified sheet into rectangular pieces.
5. Place a small amount of apricot jelly, sprinkled with a pinch of POPPING SUGAR, in the middle of each rectangle. Fold the gelified sheet to create a ravioli
